Description
Vines are planted in the Chassagne-Montrachet area, on argil and chalk soils. They are trellised using the Guyot method. Green harvest is carried out. Whole bunch pressed, using a pneumatic press, the wine is then cold settled for 24hours. before being fed into oak barrels by gravity. Alcoholic and malolactic fermentation occur naturally in the barrels. Elevage takes place over 12 months in used French oak barrels, with regular lees stirring. Delicious when served with richer fish dishes, especially grilled salmon with a creamy chive sauce, or a stand out match with Wild Mushroom Risotto.
