Description
Minimal intervention, lightweight Pinot Noir made in tiny quantities. The majority of the Pinot Noir is due to be pulled out at the Port Campbell Vineyard, but we were still able to obtain 600kg or so, translating to 2 barrels, which makes just under 50 dozen. Blue fruits, spice, signature acidity, with real drive behind it. The production of this wine required no additions of any kind – no yeasts, no enzymes, no extra acid, tannin or any of that stuff – just minimal Sulphur Dioxide.
